43: UNBAKED LOAF WITH MUSTARD FROM SUNFLOWER SEEDS AND CAULIFLOWER INSTEAD OF POTATOES

As I said, it was enough of the sweet recipes for now. Cakes, pies or cookies. They are everywhere. Today I decided to share the recipe for THE UNBAKED LOAF WITH MUSTARD FROM SUNFLOWER SEEDS AND CAULIFLOWER INSTEAD OF POTATOES. Phew, that’s a long name. I could have simply said “meatloaf with potatoes and mustard”, but it could be confusing for someone since in this recipe you will find neither the classic meatloaf, as we all know from butchery, nor the mustard sauce and certainly no boiled potatoes. But I must say that the unbaked vegan meatloaf tastes quite similar to the classic. Even my mom likes it. Even though she is not into raw, vegan or other vegetable dishes that much, she likes this recipe as it is one of the few which she has tasted.

I am going to provide you with both the recipe and calorie intake in one serving. I count my daily calorie intake and also Daniel does. Therefore when I make up new recipes I think not only about ingredients but also about the nutritional value of the meal. I should note that one serving of mine is sooo different from Daniel’s. Let’s take a look at it.

UNBAKED LOAFAs you can see in the table, we both have different portion sizes and there are two reasons for it. The first one is the fact that we need to fulfil our daily calorie intake, which we set up for ourselves. The other has to do with the fulfillment of our nutritional values, which we look at very carefully and we do our meal prep according to them. So you see that this recipe can be either 2 portions or 3 smaller ones. It all depends on how hungry you’ll be.

Meatloaf:
250 g finely grated carrot
50 g finely grated sweet potatoes
70 g finely grated parsley (the root)
70 g finely grated celery
1 clove of garlic
¼ onions
5 tablespoons of ground flax seed
1 tablespoon of Himalayan salt
1 tablespoon of cumin
1 tablespoon of marjoram

Cauliflower instead of potatoes:
1 cauliflower
Lemon juice
Himalayan salt
Pepper

Mustard:
100 g sunflower seeds (soaked in water for at least 2 hours)
100 – 150 ml water
1 tablespoon of raw apple vinegar
¼ onions
Himalayan salt, pepper
1 tablespoon of ground mustard seeds

Process:
Meatloaf: We mix all the ingredients mentioned in the recipe together. Once the flax seed holds everything together, we create five small loafs. I advise you to mix everything with hands.

Cauliflower: Take the cauliflower apart, rinse with warm tap water (it makes cauliflower tastier and easier to digest). We add few drops of lemon juice, salt and pepper.

Mustard: We put all the ingredients mentioned in the recipe to food processor and we mix it until it reaches fine texture.

UNBAKED LOAFUNBAKED LOAF
